Which one is right for your kitchen remodel is a matter of what trade offs make the most sense for your home and your family. The main trade off here is low maintenance and high durability costs more. Less expensive countertops generally need higher care and are less durable.

In summary, your options are:
Laminate (the best known brand is Formica)
The one that is best for you depends on what is most important to you:
- Stainless steel and Quartz are the easiest to keep totally hygienic, you can put a hot pot directly on them, and you can chop directly on them.
- Tile allows you to put hot pots on, but not to chop on, the grout needs to be periodically resealed, and the grout collects dirt over time.
- Granite allows you to chop directly on it as well as put hot pots on, and needs to be periodically researled or it becomes susceptible to staining and water damage.
You can also mix and match a little. You can have a laminate counter top with tile “islands” in the laminate. Hot pots can be placed directly upon the tile section.
