What is meant by “do it right” is to get a very moisture resistant finish, regardless of the type of wood flooring you install, as kitchens are the second wettest room in your home.
This article speaks briefly about the different types of wood flooring available and their relative pros and cons.

People often think of oak, but natural wood floors also come in cherry, walnut, and even some tropical hardwoods.
It is generally NOT a good idea to install natural hardwood in kitchens due to these floors requiring periodic maintenance which people often defer forever as kitchens are essential rooms. The one exception is bamboo.
Engineered woods are real woods, thinly layered on top of a non finished plywood plywood substrate. They come pre-finished, so as soon as the floor is installed, you can walk on it.
Engineered woods are not laminates. They are more expensive, but they are higher quality, more durable, and can be sanded a little to buff out scratches.
This type of flooring IS recommended for kitchens.
Laminate flooring is not real wood. Laminate is melamine infused paper on a wood chip composite.
If someone attempts to sell you on laminate flooring for your kitchen, kindly explain you are not going there, and excuse yourself.
If a little water seeps into a crack between slates, the wood chip composite swells like a sponge, and sooner or later, it will happen.
All bamboo flooring is engineered wood, but bamboo gets its own category because it is such a good choice for kitchens. Bamboo is naturally moisture resistant and is one of the lowest maintenance wood floors available.
Bamboo is considered eco-friendly as it grows much faster than other types of wood.
Cork is an excellent choice.
It comes in various shades and finishes and has one quality no other type type of wood does, which is it has some “bounce”.
If you drop a knife point down on a cook floor by accident, the floor will “heal”, which no other floor does.
This is great if you have pets whose paws might scratch your floor.
Cork is also considered eco-friendly as cork is harvested from live trees, which just grow more cork.
